Steak and sautéed onions with La Esdrújula

Ingredients

  • 1 lb thin-cut beef steak, such as palomilla
  • 1 large onion, thinly sliced
  • 1½ tsp La Esdrújula
  • 1 tbsp olive oil
  • 1 tbsp white vinegar or fresh lime juice
  • ¼ cup water
  • Salt to taste

Instructions

  1. Rub the steak with La Esdrújula, vinegar or lime juice, and salt.
  2. Heat the oil in a skillet over medium-high heat. Sear the steaks in batches for 1–2 minutes per side, depending on thickness, then transfer to a plate.
  3. Sauté the sliced onions in the same skillet for 5–7 minutes, until softened and golden.
  4. Add the water, scraping up the browned bits. Return the steak and any accumulated juices to the pan.
  5. Cook briefly until done. For whole-cut beef, cook to 145°F (63°C) and rest for 3 minutes.

To serve: Enjoy with crispy tostones.
